A good food pasta recipe is supervised in Italy

The Italians’ reaction to Fury after the publication of the famous website in the United Kingdom was published by Good Food, a recipe for a traditional Roman dish that did not include the correct original ingredients and appears to reduce fast food.

Fiepet Confeercenti said that he was “surprised” to see the recipe on this distinguished British website, which was owned by the BBC until 2024. Its president Claudio Becca said the messages had been sent to the direct media, the site owner, and the UK Edward Lillen.

“This iconic dish is traditionally from Rome and the Lazio region, it was an essential element in Italian cuisine for years, to the point that it was repeated even after the borders of Italy.”

He regretted the contradiction of the British site, but he explained that “the original recipe for Cacio e people excludes Parmesan and butter. There are no four components, but three: pasta, pepper and peppero.”

Anger has been widely covered in the Italian media, with a journalist in the public broadcaster Ray says: “We have always been told, you are not as good like the BBC … then they go and do it. Such a strong mistake. If the suggestion of adding some cream gives me the cry of terror.”

The good food brand was owned by BBC Studios (BBC commercial wing) until 2018, when it was sold to Media Forward – with the BBC dating its name last year.

Although some chefs may try the dish, the main concern is that the web site has misled the readers by serving its copy as the original.

Italians often make fun of foreigners for their interpretation of their recipes, but discontent in this case is a deeper thing: tampering with traditions.

Maurizio and Loredana run a hotel in central Rome – they were in their four generations.

“You can do all the differences in the world – but you cannot use their original Italian name. Then it becomes something else,” Maurizio said.
